Tuscan sausage & bean soup instant pot
Steps

Mix 2 Tsp. Salt in 64 oz water til dissolved, add beans, soak for 24hrs. Drain and rinse.

Preheat instant pot on saute normal, add 4 Tbsp evoo. Add in onion, carrots, Italian sausage broken into 1" balls and 1/2 tsp salt. Cook until onion is soft. Add in garlic and cook until fragrant

Add beans, bay leaves, 1/2 tsp. Salt and chicken broth to onion mixture in pot

Put lid on pot, turn nob to sealing. Pressure cook manual high for 14 min.

Natural release for 10 min.

Release pressure, open lid, add in Italian seasoning, cubed zucchini and frozen spinach. Turn on saute normal and cook with lid off until spinach is thawed

Serve with crusty bread, top with parmesan cheese
