These baby Nile tilapia come fresh from a natural pond. When cooked, their meat is sweet and fresh—totally different from farmed fish.

Clean the fish thoroughly and let them drain. Slice the mushrooms and prepare the tom yum herbs.

Bring water to a boil in a pot. Add the tom yum herbs, salt, and seasoning powder. Add the fish (do not stir, or the fish will break apart), then add the mushrooms. Cook until done.

Season with crushed chili peppers, fish sauce, MSG (if using), lime juice, sliced green onion, cilantro, and culantro. Stir gently to combine, adjust seasoning to taste, and serve.
