Coffee Semifreddo with Wafer Cookies

This is a very simple, no-bake dessert that's quick and easy to make. It's perfect as an after-meal treat or any time of day. Its flavor is reminiscent of tiramisu, but it's made without eggs and uses wafer cookies. You can use any type you like—I chose hazelnut wafers for their bold flavor. It's truly creamy and delicious, a dessert that's both tasty and beautiful to serve!

Steps
- 1
Line a medium loaf pan with plastic wrap.
- 2
In one bowl, whip the heavy cream. In another bowl, beat the mascarpone with the sugar. Add the cooled espresso, mix, and gently fold in the whipped cream with a spatula until fully combined.
- 3
Pour a layer of the cream mixture into the pan, then add a layer of wafer cookies.
- 4
Continue layering cream and wafer cookies, finishing with a layer of cream. Smooth the top and place the semifreddo in the freezer to set.
- 5
Before serving, remove from the pan, peel off the plastic wrap, and decorate with hazelnuts, wafer cookies, and melted dark chocolate.
- 6
Let it sit at room temperature for about 30 minutes, then slice and serve. Absolutely delicious!
