Soak chole in water for 6-7 hours. Then pressure cook for 5 minutes in high flame and 10 minutes in low flame. You will get soft chole.

In mixer jar take onion, garlic, green chilli and coconut chunks and grind to make masala paste.

In a kadhai heat oil, add whole garam masala and fry for a minute on low heat. Add cumin seeds and allow to splutter.

Further add masala paste, cook for 2 minutes on medium flame.

Next add cumin powder, red chilli powder and turmeric powder. Mix well and cook for 1 minute.

Add tomato paste and then amchur powder, chana masala and coriander powder. Mix and cook on low flame. Cook for 2 minutes

Now add amchur powder, chana masala and coriander powder. Mix well and cook till water evaporated.

When water evaporates from masala add salt, boiled chana and water for gravy. Cover and boil for 5 minutes on low flame.

For tempering/tadka
Half an hour before serving, heat ghee in wok and temper ajwain seeds, ginger juliens and green chilli. Mix it with Chole masala.

The tadka helps in digestion and enhances the taste. Enjoy Chole masala with poori/ steamed rice.
