Favorite Spanakotyropita (Spinach and Feta Pie)

I had some feta cheese that needed to be used up before it spoiled, and a container of yogurt that was close to its expiration date. I was planning to make our favorite cheese pie, and I had also bought spinach to make spanakopita. So I decided to combine the cheese pie recipe with spanakopita. The result was a fantastic spanakotyropita that has now become a new favorite in our house. Clean and wash the spinach thoroughly. Roughly chop it and place it in a large colander. Finely chop the onions and add them to the spinach. Sprinkle with salt and squeeze the spinach and onions with your hands to release their liquid. Set aside, squeezing occasionally, while you prepare the dough.

For the dough, combine the yogurt, olive oil, and salt in a large bowl. Use the empty yogurt container to measure the olive oil, filling it to the same level as the yogurt. Mix well, then gradually add the flour until you have a soft, pliable dough. You may not need all the flour.

Generously oil a round baking pan about 12 1/2 inches (32 cm) in diameter. Take 2/3 of the dough and press it evenly into the bottom and slightly up the sides of the pan with your hands.

By now, the spinach should be well drained. Transfer it to a bowl. Add the mint, olive oil, and pepper. Do not add more salt. Mix well and spread the spinach mixture evenly over the dough in the pan.

In the same bowl (to save dishes), crumble the feta cheese by hand. Add the egg and mix well. Spread the cheese and egg mixture evenly over the spinach.

Take the remaining dough and roll it out on a piece of parchment paper with a rolling pin until it’s the size of the pie. Carefully lift the parchment with the dough and flip it over onto the pie. Gently remove the parchment and seal the edges of the dough.

Score the pie into slices and bake in a preheated oven at 350°F (175°C) on the conventional setting for 1 hour.

Remove from the oven, let it cool slightly, and enjoy!
