Shred cheese for later.

Melt butter in a saucepan over medium heat; stir in flour, salt, and peppers until smooth. Slowly pour milk into the roux while stirring until its smooth and bubbling.

Remove bechamel from heat so its no longer bubbling. Add cheese slowly. Stir until all cheese is melted.
