I love enchiladas, especially when they're spicy with potatoes, carrots, and the classic lettuce topping. 😋🥙

Toast all the chiles and the tomato on a griddle or skillet. Then soak the chiles in hot water for about 5 minutes to soften.

Blend the chiles, tomato, onion, garlic, black pepper, and salt until smooth.

Pour the blended sauce into a pan with a little oil and simmer until it comes to a gentle boil, then remove from heat.

Grate the cheese, slice the lettuce into thin strips, and cut the tomato into slices.

In a skillet, add enough pork lard to cover the bottom and lightly fry the tortillas.

Once the lard is very hot, dip each tortilla in the red chile sauce, then quickly fry in the lard. Flip immediately, being careful not to tear the tortilla.

Fill each tortilla with cheese and repeat with the remaining tortillas.

Serve the enchiladas topped with lettuce and tomato. You can also drizzle with crema if you like. 😋

Optional: For a delicious side, add pre-cooked potato and carrot slices, dip them in the sauce, then fry in the lard. They make a great accompaniment.
