Stuffed Tomato

First lets prepare the tomatoes for stuffing, lets make a small cut on the top of tomatoes, take out all the pulp from these and make them hollow. you can remove the pulp with the help of spoon and keep the pulp aside in a bowl.

Now lets transfer the pulp in a blender and make a smooth paste and keep it aside. Now lets prepared for the tomato stuffing, so lets take one and half tbsp oil in a pan, once the oil is hot, add cumin seed, saute for a while and then add pinch of asafetida, ginger paste, green chilli, coriander powder, turmeric powder and mix it well. Now add tomato pulp (Add half amount of pulp if it is too much). Now add red chilli powder, half tsp salt and saute the spices until oil starts floating on it.

Now crumble the cottage cheese and keep aside a slice for garnishing. Now add the chopped cashew nuts, raisin and garam masala in it and mix it well. then add boiled potato and mashed it well. Now add crumbled cottage cheese and small amount of coriander leaves. Cook the ingredients for 1-2 minutes by stirring it. Now stuffing is ready, turn off he flame and transfer it into a plate so that it will cool very quickly.

Now we will stuff the tomatoes, lets fill the stuffing as much as it gets filled in the tomatoes and repeat the same to prepare all the tomatoes. Now lets take the flat pan and add 1/2 tbsp oil in it and spread it in the pan, now place all the prepared tomatoes one by one in the pan and now pour the left oil on top of all the tomatoes placed in the pan and cover the pan with the lid and lets cook it for 3 mins on low medium flame.

Now open the lid and slightly shift the tomatoes so that they gets soften from all the sides. Do this process very gently and make sure tomatoes are not broken since they will be very soft at this time. Cook the tomatoes until they slightly tender. Now finally stuffed tomatoes are ready and transfer to the serving plate and garnish with chopped coriander and grated paneer. Enjoy the taste of tomatoes :)
