Ingredients

  1. 1large onion, chopped
  2. 4tomatoes
  3. 1 bunchcilantro
  4. 1 tablespoonblack pepper
  5. 1 tablespoonturmeric
  6. 1 tablespoonginger
  7. 1 teaspoonclarified butter
  8. 2.2 poundschicken or meat
  9. 2.2 poundscouscous or semolina mix
  10. 4white turnips
  11. 4carrots
  12. 4yellow turnips
  13. 4peeled turnips
  14. 1.1 poundspumpkin
  15. 1/2 cupoil

Steps

    In a pressure cooker or pot, wash the meat well and place it in the pot. Add the chopped onion, tomatoes, all the spices, cilantro, half a cup of oil, and clarified butter. Let them sauté well, then add enough water and the vegetables. Close the lid and let them cook. Add the pumpkin and two grated tomatoes at the end for the final touch.

    Take the semolina mix, drizzle a little oil over it, and steam it for the first time. Once the meat is cooked, remove it and continue with the vegetables. If the grains are too dry, add a little water and steam them two more times. Rinse them well with water until they dry, then add the tomatoes and pumpkin for the final steaming.
