Heat a heavy bottom pan(preferably non-stick) and pour milk. Let milk boil and then simmer on low heat till the end.Using a spoon, keep stirring the milk. Note: you can use milk of your choice and quantity. Extra or less sugar as per your taste.

After 10 to 15 mins, milk will thicken. Scrape the sides of pan at regular intervals. So that bottom does not get stick and burnt. Continue to stir till the milk has reduced to half the quantity.

Continue to stir and scrape the sides. It took almost 35 mins. Add sugar. Continue to stir. It will develop a slightly grain texture and loses some moisture. Colour will also turn to slight yellowish.

Add little ghee. Stir well. Switch off flame and remove the palkova from the pan onto a bowl immediately.

Palkova is ready to serve. Serve it warm or chilled.
