Bittergourd is avoided by many people only because of its bitterness. In some part of India , many like to savour the bitter gourd leaves cutlet. it's very yummy and delicious if cooked in proper way. Karela or bitter gourd has many medicinal properties.

I have Karela plants in my village garden. I plucked some leaves and made the Cutlets. The preparation is simple and the taste is awesome. This recipe doesn't need much masala. The smell and taste of fresh karela leaves make the cutlets tasteful.

Ingredients

20 mins
5 curlers
  • 1 handfulyoung Karela leaves, clean, wash and keep some time to get dried and free of water
  • 2med size boiled potatoes, grated
  • 1med onion finely chopped
  • 1 tbspchopped beetroot
  • 1 tbspgrated carrot
  • 2 tbspfried Besan
  • 1 tspcornflour
  • 1 tspmaids
  • 1/3turmeric powder
  • 1/2red chilly powder
  • 1 pinchsugar
  • 1/2amchur powder
  • 1/4 cupsooji (semolina)
  • 1 tspcumin coriander
  • Oil for shallow fry
  • powders
  • Salt as required

Steps

  1. 1

    Mix all the ingredients up to sugar from the ingredient section properly.

  2. 2

    Give the mixture shape of cutlets.

  3. 3

    Roll on the sooji or bread crumbs to have crispy cutlets.

  4. 4

    Shallow fry all the sides, in a non- stick fry pan in low med heat.

  5. 5

    Serve hot with green chutney or tomato sauce.

    Notes:
    Amchur powder and sugar, lessen bitternes.

    You can use rice flour instead of sooji for the crispiness of cutlets.
