Chilli Cheese Omelette

This is my take on the omelette. I like my eggs cooked proper (no runny eggs) and with spices and herbs. I also like then with egg whites - the yolks can be separated for other dishes (or give them to your pet dog - they love them!).

The thing about chillies is that fats make them much easier on the tongue. If you like the flavour of pepper, you will absolutely the flavour of fresh chillies if you can tame and mask the spice. Chillies don't have to come in the form of curries, and can be used as a condiment. This dish celebrates the flavour of of chillies, combining it with everyday staples to cure many a hangover.

Ingredients

15 minutes
2 servings
  • 4eggs (or egg whites)
  • slicesParmesan / Cheddar
  • Butter
  • Veggies
  • 2Mushrooms (optional)
  • 1-2 tablespoonsSweet Corn (optional)
  • Halfa Bell Pepper (optional)
  • Condiments and spices
  • 3Green chillies (Jalapeños could work, but not recommended)
  • Kosher Salt
  • Fresh Peppercorns
  • Coriander Leaves (optional)
  • Paprika (optional)
  • Garlic (granules or fresh, finely chopped)

Steps

    The first step is to chop your veggies and chillies very finely. Chopping them finely is critical, we want to incorporate tiny bits into the omelette but not change the mouth-feel of a soft cheesy egg. It also helps distribute the flavour.

    Separate the egg whites from the yolks. There are online guides on how to do this cleanly (you can use the shell to extract the yolk, no equipment required). You may also leave some yolks in for more body, to your preference.

    Whisk the egg whites and veggies together. Add the chillies now.

    Heat a pan on low-medium flame. Add the butter. Coat the pan. Throw in the garlic to soak in the fat.

    Time to add the whisked eggs and veggies to the pan. Pour into the pan in a round contiguous shape. Depending on the size of the pan, it might go from wall to wall.

    Allow the egg to warm and solidify ever so slightly. Now, begin sprinkling cheese on the still-runny egg. Be generous. If you have cheese slices, hold off till the egg solidifies a bit more. This is the time to create layers of cheese in your egg. Get an even coat.

    Use a spatula to flip over one half of the egg onto the other, covering the cheese like a calzone. Flip the semi circular egg after a minute or so.

    Cook untill satisfied.

    Plate. Cut the semi circle down the middle and press on the egg gently with the spatula to have the cheesy centre ooze out. Sprinkle over remaining spices and consume while hot.
