Rajasthani cuisine is famous for kachori. It is mainly deep fried. It is prepare with onion and potatoes filling with lots of spices and serve with tamarind chutney. It is yummy in taste and can be prepared easily.

In a bowl sieve refined flour and moyan oil and salt make dough and rest for about 10 minutes cover with cotton cloth.

In the meantime for making stuffing in a voke add oil when hot add Asafoetida,mustard seeds and cumin seeds when cracked add chopped onion stir it now add salt.

When onion change in color light brown add spices,chopped green chilli,ginger chopped and ginger powder.

Now add mashed boiled potatoes mix well.cook it 2 minutes add chopped onion into it.switch off flame and rest for cool.

Make small balls of dough roll it spread about 2 spoonfuls of dough and roll again seal properly and roll about 3 inch. Pierce with fork.make all kachori same manner.

In a kadai add oil when hot on medium flame fry kachori in batch till golden brown from both sides. Now remove on plate or a paper plate to absorb oil can serve with tamarind chutney or green coriander chutney and enjoy.
