The trick in getting the chips to be crispy is by using green plantain. The greener they are the better. Do not make them with the ripe plantain as they will not give you the same results.

The trick in getting the chips to be crispy is by using green plantain. The greener they are the better. Do not make them with the ripe plantain as they will not give you the same results.

Peel the plantain.

Into a bowl with salty water add in the peeled plantain to reduce the chances of it oxidizing.

There are two ways of slicing the plantain. The first way is into thin rounds or thin diagonals ovals. The second way is lengthwise either full length or half length.

Heat 1 to 2 inches of oil then add in the sliced chips one at a time, making sure they do not stick together and they do not overcrowd.

Fry them stirring continuously until they are golden and crispy. This will take 2 to 3 minutes.

Once done, remove the chips from the oil and drain on a paper towel.
