Banana Bread with Mayonnaise 🍌 🍞

Bless the day I stumbled upon this recipe (thank God for the internet). For as long as I can remember, this has been my favorite and only go to banana bread recipe. It is soft and irresistibly delicious with a mouthwatering aroma in and out of the oven. The original recipe uses all-purpose flour but I took pleasure in substituting with cake flour for an airy cakey feel. I also substituted pecans for raisins, hence the addition of cinnamon for a spicy kick that goes well with dried fruits. Feel free to alter this recipe further to suit your needs. You can also double the recipe and bake it in a Bundt pan.

Preheat oven to 180C and grease or line a medium bread tin. Set aside

In a bowl mix together mashed bananas, mayonnaise and egg. Leave a few lumpy banana bits for an extra burst of flavor when your bread is ready. They lumps also add an obvious contrast in your bread slices

In a separate bowl combine flour, sugar, baking soda, cinnamon, salt and raisins. Add flour mixture to wet mixture and stir just until combined, being careful not to over-mix. P.S.- you do not need a mixer for this

Pour into a greased pan and bake for about an hour or until a toothpick/knife poked through comes out clean

Cool in pan for 5 minutes then transfer to a cooling rack to completely cool. P.S.- depending on the type of bananas used, your bread could look like any of the pictures below using the same recipe
