Growing up in Mauritius, this was one of my favourite childhood treat. I love making this at home whenever I can and enjoy it as a special treat.

Steps

Preheat oven to 180 degrees C (350 degrees F) and line your baking tray with baking paper.

Mix sifted flour and salt in a bowl.

Add softened butter and mix until combined.

Shape dough in soft ball.
- 5
Wrap in plastic film and refrigerate for 15 minutes.

Roll dough evenly (~1cm)

Cut out shapes with a cookie cutter
- 8
Place cookies on tray lined with baking paper
- 9
Bake at 180 degrees Celcius for about 15 mins. Cookies should be slightly golden, not brown

Spoon 1/2 teaspoon of jam on one cookie and put another cookie on top. Repeat with remaining cookies.
