Ingredients

1hr30 mins
This makes about 10-12 sandwiched cookies
  • For the shortbread
  • 500 gplain flour/cake flour
  • 350 gunsalted butter
  • 1/4 teaspoonsalt
  • For the filling
  • Few Tablespoons of Strawberry Jam or any other jam
  • For the icing
  • 400 gIcing sugar
  • Pink colouring - this is the traditional colouring used. However you can use any colour of your choice. You can also omit this
  • Few tablespoon of boiling water

Steps

  1. 1

    Preheat oven to 180 degrees C (350 degrees F) and line your baking tray with baking paper.

  2. 2

    Mix sifted flour and salt in a bowl.

  3. 3

    Add softened butter and mix until combined.

  4. 4

    Shape dough in soft ball.

  5. 5

    Wrap in plastic film and refrigerate for 15 minutes.

  6. 6

    Roll dough evenly (~1cm)

  7. 7

    Cut out shapes with a cookie cutter

  8. 8

    Place cookies on tray lined with baking paper

  9. 9

    Bake at 180 degrees Celcius for about 15 mins. Cookies should be slightly golden, not brown

  10. 10

    Spoon 1/2 teaspoon of jam on one cookie and put another cookie on top. Repeat with remaining cookies.

  11. 11
