Boil and grate the eggs. In a saucepan add 6 tablespoons of oil and then add onions. Add curry leaves and a tablespoon of ginger garlic paste. Sauté well till the raw smell evades. Now add the chopped tomato, required salt and cook them covered so that everything turns mushy. Now add 1/4tsp of turmeric powder, 2 tsp of Kashmiri red chilli powder and 1 tablespoon of garam masala powder and mix well. Add the grated eggs at this stage. Mix everything well. Add 300ml of water and mix well. Cover and cook till the gravy turns to a semi gravy type. Add coriander leaves and switch off the flame. Best sidedish to serve with all kind of flatbreads.
