Boil and grate the eggs. In a saucepan add 6 tablespoons of oil and then add onions. Add curry leaves and a tablespoon of ginger garlic paste. Sauté well till the raw smell evades. Now add the chopped tomato, required salt and cook them covered so that everything turns mushy. Now add 1/4tsp of turmeric powder, 2 tsp of Kashmiri red chilli powder and 1 tablespoon of garam masala powder and mix well. Add the grated eggs at this stage. Mix everything well. Add 300ml of water and mix well. Cover and cook till the gravy turns to a semi gravy type. Add coriander leaves and switch off the flame. Best sidedish to serve with all kind of flatbreads.

Ingredients

  • 2 medium size onions-chopped finely
  • 1 Curry leaves-spring
  • 1 tablespoonGinger garlic paste-
  • 1Tomato- (big size)- chopped finely
  • 1/4 tablespoon turmeric powder
  • 2tablespoon Kashmiri red chilli powder
  • 1 tablespoon garam masala powder
  • 4 eggs boiled and grated
  • as per tasteSalt
  • 300ml of water
  • as neededChopped coriander leaves-few

    Boil and grate the eggs

    Heat a saucepan with oil and add chopped onions and curry leaves

    Add the chopped tomato, required salt and cook till it’s mushy. Add the spice powders(turmeric powder, Kashmiri red chilli powder and garam masala). Cover and cook for 7 minutes in low flame.

    Add the grated eggs and add 300ml of water and mix well. Cover and cook

    Add the chopped coriander leaves and serve it in semi gravy consistency
