First, wash the urad dal thoroughly, then soak it in water overnight.

In the morning, drain the water and grind the dal in a blender until smooth. After grinding, add food coloring (if using) and arrowroot powder, then beat the mixture well.

In a small saucepan, combine 1 cup water and the sugar. Stir to dissolve the sugar, then cook over heat until it forms a one-string consistency syrup. This is an important step, so pay close attention.

To check the syrup, take a little on a spoon, let it cool, and press it between your fingers. If it forms a single thread when you pull your fingers apart, the syrup is ready.

Once the syrup is ready, heat ghee in a flat-bottomed pan. Fill a cloth piping bag or a thick cloth with 3-4 tablespoons of the beaten dal batter.

Hold the cloth tightly from the top and squeeze to pipe out round, flower-shaped Imartis into the hot ghee. Fry until they are crisp.

After frying, remove the Imartis from the ghee and dip them in the sugar syrup. Let them soak for 15-20 minutes, then remove.

Your delicious Imarti sweet is ready. Serve hot on a plate.
