Curried Chicken and Cauliflower

I have always loved puttering in the kitchen. When I was a child, I loved opening up our fridge and pantry, cabinets and spice racks. I wondered how many little things could blend in harmony and create deep flavors.

My late mom enlisted my help in the kitchen since my early years. At first I began with peeling, chopping, tasting, then gradually to stirring, mixing and grounding spices (yes, we used pestle and mortar). I began baking cookies, simple brownies, then to cooking savory dishes. It all took time. And I am grateful for the memory, thankful that my mom was patient enough with me.

Now that I have kids on my own, I'm teaching them to cook and letting them enjoy their time in the kitchen. Like me, they love to experiment in the kitchen. I made this and it turned out great!

Ingredients

4 servings
  1. 250 grchicken thigh fillet, diced
  2. 250 grcauliflower florets, cut into pieces
  3. 1onion, diced
  4. 2garlic, sliced
  5. 2 tspcurry powder
  6. 1 tsphoney
  7. 1/2 tspvinegar
  8. 1/2 tspsalt
  9. 1/2 tspcrushed black pepper
  10. 1/2 tbspbouillon powder
  11. 1 tbspoil

Cooking Instructions

  1. 1

    Heat oil in a pan. Add chicken until half-cooked. Add garlic and onion and stir occasionally.

    Add cauliflower and other ingredients except honey and vinegar.

  3. 3

    Stir until well combined. Add honey then vinegar. Adjust the taste if necessary.
