Shahi paneer is a Mughlai style paneer dish which is made out of onion gravy. Cashew nuts, poppy seeds, coconut and yoghurt are added to the gravy along with whole dry spices and other green spices which give this dish flavours and texture. This dish is rich and creamy at the same time it is mild in taste. The same dish can be prepared adding mixed vegetables instead of paneer.

Ingredients

  1. 2large onion
  2. 2green chillies
  3. 1 inchginger
  4. 4garlic cloves
  5. 10cashew nuts
  6. 2 teaspoonpoppy seeds
  7. 2 tbspfresh or desiccated coconut
  8. 2cardamom
  9. 4 tbspoil
  10. 1/2 teaspooncumin seeds
  11. 1bay leaf
  12. 1 inchcinnamon
  13. 3cloves
  14. 4black peppercorns
  15. 1/2 cupyoghurt
  16. 1 tspcoriander powder
  17. 1 teaspoongaram masala
  18. 1 teaspoonkasuri methi
  19. 1 teaspoonsugar
  20. 1/4 teaspoonblack pepper powder
  21. 1/4 tspcardamom powder
  22. as per taste Salt
  23. 3 tbspfresh cream
  24. 200 gramcottage cheese or paneer
  25. fewstrands of saffron

    Take 1.5 cup water in a pan and add sliced onion, green chilli, ginger, garlic, cashew, poppy seeds, coconut and two cardamom. Now cover and cook on medium heat for 10 to 15 minutes or until almost all the water is evaporated and everything is cooked properly. Now let it cool and grind it to a smooth paste.

    Heat oil in a nonstick pan and add all the whole spices. Now add cumin seeds and when it becomes brown, add prepared onion paste to it. Cook it for five minutes on medium heat and add yoghurt to it. Keep the heat very low and keep stirring continuously otherwise the yoghurt can split. Cook for 2 to 3 minutes.

    Now add coriander powder, garam masala, kasuri methi, sugar, salt and pepper powder and cardamom powder to it and mix everything well. After cooking for 2 minutes add fresh cream to it and cook it for another 5 minutes on medium heat.

    Now add paneer pieces to the gravy and mix everything well. Cook for 5 more minutes and turn off the heat. If you want to fry paneer, then you can shallow fry it and add to the gravy. I have not fried it.

    Garnish with a few strands of saffron. Serve shahi paneer with paratha, roti, naan or rice.
