Peel, chop and boil potatoes. Drain when cooked, mash and set a side in a bowl to cool a bit. Remove sausage meat from the skin, set a side

Chop the onion and cook gently in olive oil until soft. Add the sausage meat and brown. Cook for about 10 mins on medium heat, set a side

Preheat oven to 200. Mix potatoes, sausage, Parmesan and egg.

Season to taste. Grease a round aluminum tray with olive oil and sprinkle with breadcrumbs. Add the mash mixture and spread evenly. Sprinkle with breadcrumbs and more Parmesan. Pop in the oven for about 25 mins. Leave to cool a bit before serving
