My aunt gave me this version and it is so much easier than steaming. Nostalgic and delicious.

Mix sugar and water untili dissolved. Add pandan flavoring. Mix well.

Put cassava with juices in a large microwave proof bowl. Add dissolved sugar mixture and mix until well incorporated. While stirring, add lye water. Set aside and let sit 30 minutes.

Meanwhile, make coconut flakes mixture by mixing sweetened or unsweetened coconut flakes with 1/4 cup water to rehydrate. (You can do a mixture of both sweet and unsweet flakes depending on your preference) Set aside for rolling later.

After letting cassava mixture sit. Microwave on high for 15 minutes, stirring well every 3-5 mintues or until water has dried and cassava has cooked through. Cool. (you can speed up cooling by stirring every 5 to 10 minutes)

Drop heaping rounded spoonfuls of cooled mixture in coconut flakes. Roll each rounded ball until covered with shavings. Flatten each covered ball into a circular shaped disc. Serve.
