Ingredients

  1. 4 lbspork roast
  2. 2 tbspolive oil
  3. Rub
  4. 3 tbspbrown sugar
  5. 2 tspsalt
  6. 1 tspblack pepper
  7. 1 tsponion powder
  8. 1 tsppaprika
  9. 1 tspground mustard
  10. 1/2 tspgarlic powder
  11. 1/4 tspcayenne pepper
  12. Liquid ingredients
  13. 1 1/2 cupschicken broth
  14. 1 tbspworcester sauce
  15. 1 tspliquid smoke

Cooking Instructions

    Mix all of the rub ingredients together.

    Trim the pork roast and cut into 3 or 4 large pieces.

    Coat each piece of pork with the rub.

    Set the instant pot to saute. Add olive oil and brown the pork for about 4 minutes on each side.

    While the pork is browning, mix the liquid ingredients together.

    Once all of the pieces of pork are browned on each side, remove from the instant pot and deglaze with 1/2 cup of chicken broth mixture. Be sure to scrape up all of the little bits so you don't get the burn notice. If you haven't already, turn off the saute mode.

    Once deglazed, add the rest of the liquid and pork to the instant pot. Put the lid on and make sure the vent is set to seal.

    Pressure cook on high for 1 hour.

    Allow to natural pressure release for 20-30 minutes after it is finished cooking then quick release.

    Remove the pork from the instant pot and shred with 2 forks.

    Serve with your favorite barbeque sauce or you can thicken the juices to make a delicious sauce for your pulled pork.
