We love savory pies, especially those with a soft and slightly crispy crust, and today I made a spanakopita with feta that’s truly something special!

It doesn’t take much effort, whether you make your own crust or use store-bought, since you only need one skillet to prepare the filling and you won’t dirty many dishes.

It’s as healthy as can be—you can even make the crust with whole wheat or spelt flour (I’ve included a recipe below)—and of course, it’s incredibly tasty, with a juicy filling and amazing crust!

There won’t be a crumb left!

Ingredients

  1. 2 sheetspie dough (kourou or your preferred type)
  2. 14 ozspinach leaves (about 400 grams), washed and finely chopped
  3. 1 bunchgreen onions, finely chopped
  4. Optional: some dill (I like to use plenty)
  5. Optional: 1 leek, finely chopped
  6. 7 ozfeta cheese (about 200 grams), crumbled
  7. 1 handfulrolled oats
  8. 1egg, beaten (optional)
  9. Salt and pepper
  10. 1little olive oil for sautéing
  11. Optional: some sesame seeds for sprinkling on top

Cooking Instructions

    Heat a little olive oil in a nonstick skillet. Add the chopped green onions (and leek, if using) and sauté gently over low heat, stirring often. Add the spinach in two batches—let the first batch wilt a bit before adding the second.

    Let the spinach wilt over low heat, stirring for about 5 minutes. Season with salt and pepper. Remove from heat. Let cool for 5 minutes, then add the oats and mix. If using the egg, add it beaten and mix well to combine.

    Preheat your oven to 340°F (170°C). Line a baking pan or glass dish with parchment paper and lay out one sheet of dough. Sprinkle half the feta over the dough, spread the spinach mixture on top, then add the remaining feta. Cover with the second sheet of dough, folding the edges to seal. Score only the top layer of dough into pieces with a knife, poke a few holes with a fork, lightly sprinkle with water, and add sesame seeds if desired.

    Bake at 340°F (170°C) for about 40 to 50 minutes, or until the pie is golden brown. Check to make sure it doesn’t burn.

    Once baked and golden, remove from the oven and let cool for 30 minutes before serving. Enjoy!
