Spanakopita with Feta – Easy and Quick with Homemade Crust

We love savory pies, especially those with a soft and slightly crispy crust, and today I made a spanakopita with feta that’s truly something special!
It doesn’t take much effort, whether you make your own crust or use store-bought, since you only need one skillet to prepare the filling and you won’t dirty many dishes.
It’s as healthy as can be—you can even make the crust with whole wheat or spelt flour (I’ve included a recipe below)—and of course, it’s incredibly tasty, with a juicy filling and amazing crust!
There won’t be a crumb left!

We love savory pies, especially those with a soft and slightly crispy crust, and today I made a spanakopita with feta that’s truly something special!
It doesn’t take much effort, whether you make your own crust or use store-bought, since you only need one skillet to prepare the filling and you won’t dirty many dishes.
It’s as healthy as can be—you can even make the crust with whole wheat or spelt flour (I’ve included a recipe below)—and of course, it’s incredibly tasty, with a juicy filling and amazing crust!

Cooking Instructions

Heat a little olive oil in a nonstick skillet. Add the chopped green onions (and leek, if using) and sauté gently over low heat, stirring often. Add the spinach in two batches—let the first batch wilt a bit before adding the second.

Let the spinach wilt over low heat, stirring for about 5 minutes. Season with salt and pepper. Remove from heat. Let cool for 5 minutes, then add the oats and mix. If using the egg, add it beaten and mix well to combine.

Preheat your oven to 340°F (170°C). Line a baking pan or glass dish with parchment paper and lay out one sheet of dough. Sprinkle half the feta over the dough, spread the spinach mixture on top, then add the remaining feta. Cover with the second sheet of dough, folding the edges to seal. Score only the top layer of dough into pieces with a knife, poke a few holes with a fork, lightly sprinkle with water, and add sesame seeds if desired.

Bake at 340°F (170°C) for about 40 to 50 minutes, or until the pie is golden brown. Check to make sure it doesn’t burn.

Once baked and golden, remove from the oven and let cool for 30 minutes before serving. Enjoy!

Hi Everyone!! I wanted to share with you this Spinach Pie recipe that my mom gave me many moons ago. I remember it was hard to find Greek products in our area, so once a month we had a day trip to Astoria. Wow!!! that was a long time ago, anyway we would go to this little Greek Deli Store to buy what she needed for the month. She always had a list ready, (and she still does today) with the usual products. Feta, Coffee, Olives, Oil, classic right! I know!! :0Till this day, whenever I go back to Greece to visit my mom, we go to Athens City Center into the old market area…have a cup of coffee, catch up on things, and then go shopping.
