  2. 24chicken wings
  3. 1/4onion, chopped (1/2 cup)
  4. 1/2 teaspoondried thyme (2 teaspoons fresh)
  5. 1 teaspoonchives (2 teaspoons fresh)
  6. 4garlic cloves
  7. 1/2 teaspoonground ginger (2 teaspoons fresh)
  8. 1green or ripe chili pepper
  9. 1/2 teaspoonallspice
  10. 1/4 teaspoonground cinnamon
  11. 1/2 teaspooncurry powder
  12. 1 teaspoonsalt
  13. 1/4 teaspoonground black pepper
  14. 1 tablespoonsoy sauce
  15. 1/2 teaspoonbrown or white sugar
  16. 2 tablespoonsvegetable oil
  17. Brown rice with black beans
  18. 1 cupbrown rice
  19. 1 tablespoonolive oil
  20. 1/2 cupchopped onion
  21. 1chopped garlic clove
  22. 1/3 cupdiced red bell pepper
  23. 1/3 cupdiced green bell pepper
  24. 1 teaspoonchopped fresh thyme
  25. 1 cupwater
  26. 2 cupscoconut milk
  27. 3/4 teaspoonsalt
  28. 1 cupcooked black beans

Steps

  1. 1

    Chop and measure all the ingredients. Pat the chicken wings dry with paper towels. Place all the spices in a blender and blend into a smooth paste. Season the chicken wings and let them marinate for 1 hour at room temperature or 3 hours in the refrigerator. Place the wings on a baking sheet and bake at high heat for about 1 hour until browned. You can also grill them if you prefer.

    TO PREPARE THE RICE: In a small pot, heat the oil and sauté the onion, garlic, bell peppers, and thyme together. Add the rice and toast it lightly. Add the water, coconut milk, and salt, and bring to a boil without letting it overflow. Reduce the heat and cook slowly until the liquid is absorbed and the rice is tender. Add the cooked black beans and stir.

    Serve the wings with the rice.
