Gizzard & Garlic Scapes Oyster Sauce Fry

I make this when garlic scapes are on sale, but their flavor and smell is too intense, so I didn't make it that often. Recently, I made it again and found that garlic scapes have become a lot milder.
It takes a little while for the garlic rabes to cook.
The edges of the gizzard pieces become frilly when cooked, so make sure to cook through.

Remove the white-ish grains from the gizzards and slice into 5 mm pieces. Buying ones with the grains removed already is easier. Cut the garlic rabes into 5 to 6 cm pieces, and mince the ginger.

Heat vegetable oil in a frying pan and cook the ginger until it becomes fragrant. Add the gizzards and cook until the surface has become whiten.

Add garlic scapes and stir-fry. Once mixed in with the oil, add sake and cook until the liquid evaporates. Sprinkle pepper and oyster sauce, finish with a round of sesame oil and it's complete.
