Heart-Shaped Chocolate Pie Bites

Since Valentine's Day was approaching, I made these for my daughter. The shapes didn't really look like hearts when I used a 3 cm mold, plus the chocolate wouldn't fit, so I'll use 5 cm molds next time.
I recommend using a 5 cm mold. Putting a lot of chocolate inside is really yummy.

Add the ◇ bread flour and cake flour to a bowl. Add 1 cm cubed cold butter and mix with your fingers until crumbly.

After the batter becomes pretty crumbly and mixed together, form a well in the center and pour in the cold water.

Use the palm of your hand to gather it all together. Wrap it tightly and rest in the refrigerator for 1 hour or more.

Dust a working space with flour and use a rolling pin to roll out the dough from Step 3 to a thickness of 1 cm.

Fold it together three times and then roll out in the opposite direction. Repeat this 4-5 times.

Tightly wrap it again and let it rest in the refrigerator for 30 minutes.

Preheat the oven to 230ºC. If you have it, set down a 3 mm cake ruler, and roll out the dough to 3 mm with a rolling pin. Cut into hearts and line up on the tray.

You'll be using 2 hearts for one pie. On one side, top with broken chocolate pieces that fits the dough. On the other heart, spread lines using egg yolk mixed with 1 teaspoon of water to act as a glue, and then sandwich the hearts.

As seen in the image, use a cake fork with thin tines to secure the two pieces together.

Spread a sheet of aluminum foil onto the baking tray and line up the pies. Brush on of the same "glue" made from a wash (egg yolk mixed with water), and top with a sprinkling of granulated sugar. Bake for 10-15 minutes on the middle rack at 230ºC.
