Cherry Tomato Compote with Lemon Jello

The tomato compote tastes great on its own, but it's extraordinary when combined with lemon, which is why I combined it with this refreshing and invigorating jello.

Steps

Boil the cherry tomatoes to peel the skins.

Add the water, sugar, and lemon juice to a pot and heat. Add the peeled cherry tomatoes. Simmer for 5 minutes on low heat.

Place Step 2, with the liquid, into a Tupperware (or plastic) container, and let cool. Then let chill in the refrigerator overnight.

After it has chilled overnight, separate the tomatoes from the liquid. Don't throw the liquid away as it will be used in the lemon jello!

Dissolve the gelatin in hot water and then add to the simmered tomato liquid. Once hardened, break apart with a fork.

Place the tomato compote onto Step 5 and enjoy.
