A typical WFH lunch which involves cobbling together anything I can find in the fridge. Sometimes I add very finely diced apple to this, but today I instead used the inner core of a stalk of broccoli which I didn’t want to waste. If you trim off the tough outer stalk, the inside bit can be finely diced and adds a gorgeous fresh crunch! #CookEveryPart
