A meat free delicious alternative to traditional bolognese made with a meat ragu

Ingredients

  1. 1white onion
  2. 1large carrot
  3. 1celery stick
  4. 1 punnetbutton mushrooms
  5. 1 tintomatoes
  6. 1pouch Merchant Gourmet Puy Lentils
  7. 1beef stock cube
  8. 2 clovesgarlic
  9. 1 sprigfresh Rosemary (or 1 tsp dried)
  10. 1 sprigfresh Sage (or 1 tsp dried)
  11. 1 sprigfresh thyme (or 1 tsp dried)
  12. 1 tbspolive oil
  13. Salt and pepper
  14. 200 gspaghetti
  15. Parmesan (to taste)
  16. Fresh parsley to serve

Cooking Instructions

    Finely dice veg and add to a pan along with the olive oil

  2. 2

    Gently cook until the veg has softened and reduced but don’t brown too much

  3. 3

    Add the garlic along with salt and pepper

  4. 4

    Dissolve the beef stock in 200ml of water and add to the veg

  5. 5

    Add the tinned tomatoes and the all of the herbs

  6. 6

    Add the pouch of lentils and reduce the heat to a simmer

  7. 7

    Meanwhile add spaghetti to a pan of boiling water

  8. 8

    Add a ladle full of the starchy spaghetti water to the lentils and stir through

  9. 9

    When the spaghetti is cooked mix through the lentil ragu and serve, topped with Parmesan and fresh parsley
