There are different scone recipes, some require buttermilk and other interesting versions contain custard powder.I prefer this version with icing sugar instead of castor sugar, do not roll out the dough and you will have excellent scones with good height. #kickstart

Sift Flour,baking powder and icing sugar

Rub the butter into the dry ingredients until it forms a breadcrumb texture

In a separate bowl,beat the eggs and sour milk together and add in the Vanilla essence

Pour the egg,sour milk mixture into the flour

Lightly flour your work surface

Place your entire mixture onto surface

Do not roll out, with a light hand Pat the dough to a 3cm thickness,this results in a perfect rise.

Using a scone cutter,cut each scone and place onto a greased,oven proof flat dish,keeping in mind to spread the scones out

Whisk one egg and brush the tops of each scones before placing in the oven

Bake at 180°c, for about 15 minutes or until golden brown on top and lightly brown at the bottom of each scone.
