I like really long spaghetti and often accompany this with beef stew but with January, budget is tight so the beef will have to wait till next time.

Peel potatoes and carrots and clean them properly then set aside the potatoes

Dice 1 carrot and grate the other and set aside

Fry 1 onion until golden brown then add 2 tomatoes

Once the tomatoes are ready, add in ginger, garlic and black pepper
- 5
Add in the diced carrots and potatoes and set cover for 10min

Peel the remaining tomatoes and slice. Dip into a blender together with the grated carrots and leek leaves to form a paste and set aside

Add 2 cups of water and the spaghetti,(you can break the spaghetti or cook them whole. I made them whole as I like using a fork for my spaghettis.)

As the water starts to boil, spaghettis soften and in a short while, all spaghetti is covered in water. Let it boil until water runs out and your food is ready.

Add in dhania then cover the pot and turn off the heat

In a separate sufuria, fry the second onion until golden brown.

Add in any spices to you desired preference and add in the blended vegetables. Fry until only the thick paste remains.

Serve hot and enjoy
