When I was a child, my mom often made shredded chicken rice for us.
In college, my roommate was from Chiayi, and sometimes during holidays, I would visit Chiayi with him. He introduced me to Chiayi's turkey rice.
Chiayi turkey rice tastes quite different from the shredded chicken rice my mom made, with its slightly sweet sauce topped with chicken oil and crispy fried shallots. This simple deliciousness reminds me of the wonderful memories with my roommate during college.
It's been a long time since I've had this simple and delicious snack.
Today, I decided to make this nostalgic dish for a solo lunch.
