Ingredients: 1 head cauliflower, grated; 1 tablespoon sesame oil; 1 tablespoon vegetable oil; 1 clove garlic, minced; 1 teaspoon fresh ginger, minced; 1/3 cup red bell pepper, diced (about 50 grams); 1/2 cup carrot, diced (about 65 grams); 1/2 cup green beans, cooked and chopped into small pieces (about 60 grams); 1 egg, cooked as a flat omelet and cut into small squares; 1/4 cup green onions, sliced (about 15 grams); 1/2 teaspoon salt, or to taste

I used this cauliflower rice as a side for some pork ribs with stir-fried vegetables. I really enjoy using cauliflower as a side dish—fried with other vegetables, it's delicious. I always prepare it in different ways with different flavors.

Serves 4 servings

1 headcauliflower, grated
1 tablespoonsesame oil
1 tablespoonvegetable oil
1 clovegarlic, minced
1 teaspoonfresh ginger, minced
1/3 cupred bell pepper, diced (about 50 grams)

Steps

Heat a skillet with both oils and sauté the garlic and ginger together.
Add and stir-fry the red bell pepper and carrot.
Add the cauliflower and cook until heated through.
Add the egg pieces, green onions, green beans, and salt. Mix well and serve.
