Grind the cashews into a fine powder using a blender or food processor.

Sift the cashew powder through a fine sieve. Re-grind any coarse pieces until all the cashews are finely powdered.

In a heavy-bottomed pan, combine the sugar and water. Cook over medium heat to make a one-string sugar syrup.

Once the syrup is ready, turn off the heat and mix in the cashew powder. Stir well until the mixture is smooth and combined.

Grease a sheet of plastic or parchment paper with ghee (clarified butter). Place the cashew mixture on it and knead well. Roll it out with a rolling pin to about 1/4 inch thickness.

Apply edible silver leaf on top, if using. Let it set. Cut into your desired shapes.

Kaju Katli is ready to serve.
