Ingredients

2 servings
  1. 2 smallEggplants
  2. 100 gramsMelting cheese
  3. 2 tbspKetchup (or pizza sauce)
  4. 1 tbspDried parsley
  5. 2 tbspOlive oil

Cooking Instructions

    Slice the eggplant into 1 cm thick rounds, and soak in water for a minimum of 15 minutes to remove any bitterness.

    Put 2 tablespoons of oil into a frying pan. Add the eggplants and stir-fry.

  3. 3

    When the eggplant is cooked, cover the pan and steam-fry over low heat.

  4. 4

    Once the eggplant becomes soft, align on a heatproof dish, and sprinkle on the ketchup. Top with heaps of melting cheese.

    Bake for 5 minutes in a 150℃ preheated oven. Once the cheese is nicely melted, it's done!

    You can certainly add the cheese and ketchup into the frying pan in Step 3. Cover the pan to steam-fry.
