Kand Ka ragda Pattice

To make the tikkis, peel the kand and chop it into small cubes, add a little water maybe half a cup and cook it in a cooker. Take two whistles and reduce the flame. Keep it for another 5-8 mins and then shut the flame. Let the cooker cool down.

Once the kand mixture cools down, take it in a plate and add 1/2 TSP jeera powder, 1 TSP dhaniya powder, rock salt, turmeric 1/4 TSP and 1/4 TSP hing. Mash this all together and shape it into tikkis. I kept mine in the fridge until I needed to cook them later.

Watana: Take the white watana and soak it in water overnight. Doesn't matter if there is a lot of water. You can always strain it out.

Next day morning, take the soaked watana and add 1/2 TSP turmeric and a pinch of salt and cook it in a pressure cooker. Probably would need three to four whistles. If it hasn't cooked you can put it back for some more

Until the peas cook, we can then shape the tikkis as shown below. And add it to a pan and pan fry with some oil and keep warm till you serve.

Blend into a mixer half cup Pudina, a cup of coriander leaves, 1/4 TSP caraway seeds, 1/2 TSP chat masala, 1/2 TSP roasted cumin powder, green chillies and rock salt to taste. That's going to be your wonder green chutney.

Finely chop 2 medium onions, 2 medium tomatoes, finely chopped coriander leaves and keep them all separate they will form the toppings.

I got a ready-made dates, tamarind and jaggery chutney in a separate bowl.

And once you have the peas ready, we are set to serve. Take two tikkis and place them into a bowl. Slightly mash the cooked peas. If they are runny, please remove excess water they should be mushy but not runny. Add two ladles of the peas and add some cumin and coriander powder. Next add the onions, tomatoes and then the green chutney and the sweet tamarind chutney. Garnish with some coriander. Taste and adjust the salt as needed.
