Mix all the marinade ingredients together in a bowl then add the pork. Cover the top with clingfilm and allow to marinade overnight in the fridge for best flavour.

Allow the steaks to come to room temperature before cooking, so ideally take out of the fridge a couple hours before cooking it.

For best results use a cast iron pan. Heat the pan over medium-high heat, once the pan is hot, add 1-2 tbsp of olive oil.

Scrape the marinade from the pork or allow to drain from the meat. Add to the pan and sear on each side for 2 minutes.

Reduce heat and continue to cook for another 3-5 minutes on each side or until cooked through.

Season with salt and pepper if needed just before removing the meat from the pan then let the meat rest for 5 minutes before serving.
