Crispy & Soft Banana Potato Starch Donuts

This is a variation of the katakuriko donuts recipe. I love donuts, and a long, long time ago there was a recipe in a sweets cookbook for banana fritters, so I decided to give this a try.

These are easier to fry if the bananas are not too large. I'm pretty messy, so I always cut the banana on top of the removed peel, lol. Once you've mixed the batter and the banana fry as quickly as possible to take advantage of the power of the baking powder. After frying the banana will be pretty hot, so be careful not to burn yourself. Recipe by Satsuki519

Ingredients

8 servings
  1. 70 gramsCake flour
  2. 30 gramsKatakuriko (potato starch flour)
  3. 30 gramsSugar
  4. 1 1/2 tspBaking powder
  5. 80 mlWater (milk is also okay)
  6. 1Banana
  7. 1Frying oil

Steps

  1. 1

    Cut the banana into about 1.5 cm slices. Place the bowl on a scale and add the powder ingredients while measuring (gross weight + amount).

    Use a rubber spatula or large spoon to mix well. Add the water and mix in a cutting motion until no longer powdery. Add the banana.

    Heat the frying oil in a small frying pan or pot. Just enough for the banana pieces in step 2 to be submerged in and quickly float. Prepare a rubber spatula or large spoon.

    Use the spoon to scoop up the banana pieces, covered in batter, 1 at a time and place in the pan to fry (weak-medium to medium heat). Fry while using chopsticks to turn them over.

    They cook easily, so they fry pretty quickly. Once they've browned drain them of oil and they're complete.
