Polenta Chips

Another recipe with my beloved polenta. Do you have a couple of leftover slices and don’t know what to do with them? Here are polenta chips, a tasty snack that’s perfect for appetizers! Loved by both kids and adults, these crispy chips have only one flaw... they disappear too quickly!

Another recipe with my beloved polenta. Do you have a couple of leftover slices and don’t know what to do with them? Here are polenta chips, a tasty snack that’s perfect for appetizers! Loved by both kids and adults, these crispy chips have only one flaw... they disappear too quickly!
Steps
- 1
Blend the leftover polenta with the herbs. The polenta shouldn’t be too moist. You want a well-mixed, creamy texture.
- 2
Place a sheet of parchment paper on a baking sheet and lightly brush it with a little olive oil.
- 3
Spread the polenta mixture into a very thin layer, using another sheet of parchment paper and a small rolling pin to help.
- 4
Cut the chips into squares. Bake at 350°F (180°C) in a convection oven for about 20 minutes. They should be nice and crispy—if not, bake for a few more minutes. Remove from the oven and let cool! Enjoy!
