Samosa is a popular street food all over India.It originated mainly in Middle East where it is called Sambousa.The basic difference between the two is street style samosa is done with vegetables whereas Sambousa is non veg. This is a deep fried snack and a sure hit at parties and also relished as a teatime snack with a cup of hot tea or coffee.People are familiar with vegetable or chicken or mutton mince stuffed samosa.Fish samosa is something different and a bite into this delectable snack will make you crave for more ! The ingredients for this authentic recipe are fish,carrots,green peas,onion ,ginger garlic paste and green chillies which are boiled and then fried with spices for a delicious filling.The crust is however made with all-purpose flour.It is a time consuming recipe,preparing the stuffing then kneading a dough either with all-purpose flour or wheat flour for making the outer crust.The outcome is a crispy snack with a soft melt in mouth stuffing and relished with a sweet,sour and tangy sauce.

Ingredients

4 servings
  • For stuffing
  • 300 gmsrohu fish
  • 1carrot cubed and boiled
  • 2 tbspgreen peas boiled
  • 2onions chopped finely
  • 1 tbspginger garlic paste
  • 1/2 tspturmeric powder
  • 1/4 Tsp red chilli powder
  • 3green chillies chopped finely
  • 2 tbspfresh bread crumbs
  • To taste salt and sugar
  • 2 tbsptomato puree
  • 1/2 tspgaram masala
  • 1 tbspRaisins
  • 1 tbspcoriander chopped
  • 2 tbspmustard oil
  • For crust
  • 1.5 cupsmaida or all-purpose flour
  • 1/2 tspajwain
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 2 tbspoil for mixing in maida
  • 1/2 cupwater or as needed for kneading dough
  • As neededoil for frying

    Boil cubed carrot and green peas.Strain water.In the remaining stock,add little salt,turmeric and boil the fish for 5 minutes.Dry up water in fish.Debone fish and mash well.Boneless fish cubes may also be used.Mash the carrot.

    Add freshly ground breadcrumbs to mashed fish,carrot.Mix well and add ginger garlic paste,tomato puree,turmeric,red chilli powder,chopped green chillies,salt and sugar to taste.Lastly add the boiled peas and mix well to form a dough.Heat mustard oil in a pan.Add chopped onion and fry till light brown.

    Add the mashed fish dough to the onion and fry well till completely dry.Add garam masala,chopped coriander and 1 tsp ghee.Also add raisins and toss well.Fish stuffing for samosa done.

    For the outer crust,take maida in a bowl.Add salt,ajwain,baking powder,refined oil to it and mix well.Add water to knead flour into a tight dough.Divide dough into 5 balls.Cover and rest for 10 minutes.

    Roll each ball with a rolling pin to get an oval shape. Cut from the centre.Shape into a cone matching two ends together and stuff a portion of fish filling in it.Secure the edges by smearing water.Give it the shape of a triangle.

    Heat oil in a pan and fry samosas in low to medium flame till nicely brown and crispy.Serve hot with hot and sweet tomato sauce or tamarind and green chutney alongwith a cup of tea as an evening snack or appetizer at parties.
