Celeriac is a lovely seasonal vegetable that is widely available in the supermarkets and grocers at this time of year. I like the mild but distinctive flavour of this vegetable and mashed celeriac pairs beautifully with roasted garlic.

Celeriac is a lovely seasonal vegetable that is widely available in the supermarkets and grocers at this time of year. I like the mild but distinctive flavour of this vegetable and mashed celeriac pairs beautifully with roasted garlic.

Start by preparing your celeriac. Give it a good wash. Then for this recipe I like to lightly peel it as this gives a smoother mash at the end.

Then I cut off the knobbly bits at the root end. Don’t throw away your peelings as they give a lovely flavour to veg stock (you can freeze them if needs be) #cookeverypart

Now place your celeriac on a sheet of foil. Peel the garlic cloves and scatter them at the base. Then rub the oil over the surface of the celeriac.

Wrap the whole thing up in a loose but air tight parcel and bake in the bottom of your oven at 160 C for 2 hours.

Test to see if it’s cooked by pushing a knife or skewer into it. Larger veg might need longer.

Let it cool a bit. You can cut it into wedges here and serve it, or transfer it to a food processor and blend. Make sure you pour in an in y oil from your roasting foil and of course the garlic! Sprinkle with a touch more salt and serve.
