Ingredients

  1. Paneer
  2. 12 ozpaneer
  3. 1 tsp.turmeric
  4. 1/2 tspcayenne
  5. 1 tspsalt
  6. 3 TBSvegetable oil
  7. Saag
  8. 1 (16 oz)frozen chopped spinach. Thawed and drained
  9. 1 bunchfenugreek leaves
  10. 1medium onion finely chopped
  11. 1 TBSginger
  12. 2diced tomatoes
  13. 4 clovesgarlic
  14. 1serrano pepper
  15. 2 tspgaram masala
  16. 2taps coriander
  17. 1 tspcumin
  18. 1/2 tspturmeric
  19. 1/2cayenne
  20. 1/2 cupgreek yogurt or 1/2 cup heavy cream

Steps

  1. 1

    Chop paneer into 1/4 " cubes. Whisk together vegetable oil, turmeric, cayenne and salt and toss paneer in spices.

    Saute paneer until toasted on both sides. Set aside.

    Add onions and caramalize until toffee colored golden brown

    Add garlic and ginger and heat additional 1-2 minutes.

  5. 5

    Add tomatoes, spinach, fenugreek and remaining spices and heat until soft.

    Set aside and cool

  7. 7

    Spoon mixture into blender and blend until smooth.

  8. 8

    Combine paneer into saag base and heat. Slowly stir in yogurt

  9. 9

    Serve with rice and naan
