I bought lots of Pacific saury cheaply. I was tired of plum simmered or grilled Pacific saury so I made it into Karaage, which kids love.

It's easy to eat for kids since the bones are already removed.
If you like a lighter, more delicate flavor, reduce the marinating time. Sake softens the fish, and the ginger removes the fishy smell. Recipe by Kurumihinata mama

Ingredients

  1. 4Pacific saury
  2. 1 tbsp★Sake
  3. 1 tbsp★Mirin
  4. 2 tbsp★Soy sauce
  5. 3cm Grated ginger (tubed is OK)
  6. 1Katakuriko

Steps

  1. 1

    Fillet the fish and cut into pieces of your preferred size. I cut each fillet into 3 pieces. Place the fish into a plastic bag.

  2. 2

    Add ★ marked ingredients into the plastic bag and coat the fish and marinate for 20~30 minutes. The flavor will be stronger when marinated for 30 minutes.

  3. 3

    Dredge the fish pieces in katakuriko, shake off the excess and deep fry until crunchy and golden brown .
