Ingredients

  • 4 slicePork loin sliced for cutlets
  • 1Coarsely ground pepper
  • 1/2 tbspper 1 slice Grainy mustard
  • 100 gramsTempura flour
  • 100to 120 ml Water
  • 1White bread slice (fresh bread crumbs are the best)

Steps

  1. 1

    Place the pork slices and bash both sides with the back of a knife to cut the sinews like in this photo.

    Sprinkle both sides with salt and pepper. Spread mustard on each slice.

    Dip in tempura flour dissolved in water and thickly coat with panko. If you have time, leave them to rest in the fridge at this stage.

    Deep-fry until crispy golden.
