With Valentine's Day coming up and spring on the way, I'd like to share these Happy Candies along with some Love Cakes. Making Happy Candy truly fills you with happiness—my wife shapes the candies, my husband cuts them, and my mother wraps them. That's how our Happy Candy is made!
Steps
- 1
Measure out all the ingredients. Rinse the rose petals and let them dry. Toast the nuts until crispy, then measure 3 1/2 ounces (100 grams) of the mixed nuts and keep them warm. Divide the mixture to make five different colors of candy if you like.
- 2
Start with the white marshmallows. Melt 3 1/2 tablespoons (50 grams) butter in a pan, then add 3 1/2 ounces (100 grams) marshmallows. Stir constantly over low heat until it forms a dough-like mass. Gradually add 2 tablespoons (25 grams) milk powder, mixing well until all the powder is incorporated and the mixture no longer sticks to the pan. Turn off the heat, add the 3 1/2 ounces (100 grams) mixed nuts, and stir to combine. Finally, add the chopped rose petals.
- 3
Once the nuts and rose petals are mixed in, wear gloves to avoid burns. Transfer the mixture to a mold lined with plastic wrap. Use a plastic spatula to gently press and flatten the mixture evenly in the mold. Cover with another piece of plastic wrap and let it sit for 4 hours to firm up. Repeat the same process and measurements for each color you want to make.
- 4
After making all the colors, let the candies set at a cool room temperature—they will firm up without needing to be refrigerated. If you refrigerate them, they may become too hard and difficult to cut. Once the candies are firm, cut them into finger-length pieces of equal size.
- 5
Wrap each candy in a candy wrapper. Your candies are ready!
- 6
Pair these sweet, nutty Happy Candies with a rich Love Cake to share with your loved ones on Valentine's Day.
