I read this recipe at the library. I truly admire the simplicity of it. This time I made a maple syrup version, but I have made variations by adding fruits and chocolate.

The only hint I can think of is not to over-mix the batter . You can make these muffins in no time!! It's delicious as-is but it's also delicious with raisins and chocolate added. Recipe by Accherunba

Ingredients

6 servings
  1. 100 gramsCake flour
  2. 1 tspBaking powder
  3. 1 pinchSalt
  4. 50 gramsMaple syrup
  5. 50 gramsMilk
  6. 50 gramsVegetable oil

Cooking Instructions

    Preheat the oven to 180°C. Measure out the dry ingredients in a bowl, and with the bowl still on the scale, measure out the maple syrup, milk, and vegetable oil, in this order.

    Quickly whisk the mixture together. If you whisk too much or for too long, the muffins will not rise, so be careful.

    Pour the batter into the muffin tins, and bake for 25 minutes in the oven.

    Once baked, remove the muffins from the oven, and let them cool in the pan.
