Easy One-bowl Maple Banana Muffins

I simply mixed all the ingredients for these easy muffins and they were so delicious, I decided to post the recipe. They stay fluffy, moist and soft even after sitting out for a while. You can make an easy snack with this recipe.

Just add the ingredients to the bowl and mix! Margarine is convenient since they are soft right out of the fridge, ready for you to start making the muffins. After baking, you can wrap the muffins individually to store. The muffins will stay fluffy and moist even after they have cooled and been sitting out for a while. Recipe by Lesser Panda

Ingredients

6 servings
  1. 100 grams☆Cake flour
  2. 50 grams☆Bread flour
  3. 5 grams☆Baking powder
  4. 40 gramsMargarine
  5. 40 gramsVegetable oil ( I used canola oil)
  6. 100 gramsSugar
  7. 2 largeEgg
  8. 1few drops Vanilla oil
  9. 2Ripe bananas
  10. 30 gramsMaple jam tablets

Steps

    Pre-heat the oven to 170 °C.

    Whip the margarine with a whisk until it becomes a creamy consistency. Add the vegetable oil and mix well. Add the sugar and vanilla oil and mix until well blended.

    Add the 1st egg to the batter and give it a quick stir, add the 2nd egg and mix until incorporated. Sift the ☆ dry ingredients into the bowl and stir until the mixture is smooth. Be careful not to over mix the batter.

    Mash the bananas with your hands and add to the batter. (Or you can either mash up the bananas with a fork.) Add the maple jam tablets. With a spatula, mix the batter with a cutting motion.

    The batter is ready when all the ingredients are evenly combined and it's smooth. Pour the batter into the muffin molds, filling them up 80% full. Bake in the 170°C pre-heated oven for 30 minutes.

    Each oven is different, so check on your muffins periodically. When the muffins are golden brown and after testing with a skewer until it comes out clean, the muffins are ready. Place on a cooling rack to cool.

    Cut into halves. The bananas and maple jam tablets become so creamy and delicious. The fragrant from the muffins are great too.

    These are fluffy right out of the oven. They will stay fluffy and moist, and will not harden even after they have cooled and been sitting out for a while. A perfect easy snack when you're on the go.

    You can buy (maple) jam tablets at Cuoca.

    You can make chocolate versions by substituting the maple jam tablets to 60 g of crushed chocolate bars! These are yummy too.
