Ingredients

  1. 2 (3 pound)chickens cut into eight's
  2. 2eggs beaten
  3. 2 tablespoonswater
  4. 1 cupmatzo meal
  5. 1 teaspoonsalt
  6. 1/8 teaspoonpepper
  7. 1/2 cuphot water
  8. 1/4 cuphoney
  9. 1 cuporange juice

Cooking Instructions

  1. 1

    Rinse the chickens and remove excess fat then pat dry

  2. 2

    In a shallow bowl combine eggs and water and beat well. In another shallow bowl combine matzo meal, salt and pepper. Dip chicken in egg mixture then roll in the matzo meal

    Heat oil in a 10 inch skillet over a medium flame. Place coated chicken in hot oil and brown on both sides, approximately five minutes per side

    Remove chicken to a Dutch oven or covered roasting pan

  5. 5

    In a small bowl combine hot water, honey and orange juice.

  6. 6

    Pour over chicken and cover.

  7. 7

    Simmer slowly on stovetop or place in preheated 325°F oven for 45 minutes or until tender

    Based occasionally
